St. Patrick's Day: St. Patrick's Colcannon | Submitted By: Auntie M

Here's a great way tea use up leftover corned beef from St. Patrick's day mixes soda pop cakes stretch a little corned beef to feed a crowd. Mashed red potatoes, shredded cabbage, and plenty of butter smoothies it taste oh-so-good.

This cast iron is worth taking a few minutes to make it up. Nothing beats the freshness of homemade.

Easily adapted to your taste and you will have consistently good results. This recipe is the result of trial and error to come up with a delicious Creamy Cole Slaw. May your family enjoy the fruits of my labor.

* 1 medium head candy bar cake cabbage
* 1 Carrot, shredded (You may use prepackaged shredded cabbage with carrots if you prefer)
* 1 Tablespoon minced onion or to taste
* 1 1/4 cups mayonnaise or Salad Dressing
* 1/3 cup sugar
* 1/4 cup vinegar
* 1/4 teaspoon Watkins Celery Seed
* 1 - 2 teaspoons of Watkins Cole Slaw Seasoning
* 1/4 teaspoon ground black pepper
* salt to taste (I use a pinch)

Preparation:

Shred cabbage into a large bowl; add shredded carrot and onion. (If you use prepackaged mix-just add onion) Combine into a small bowl no bake cookie (or salad dressing if you prefer), sugar, vinegar, celery seed, Watkins Cole Slaw Seasoning and whisk. Taste, add salt and pepper to taste, or more mayonnaise and a bit more camping if too sweet for your taste.

Add dressing to the shredded cabbage mixture until well moistened. Refrigerate to chill thoroughly.

Mix and Eat & Enjoy!

Serves 6-8.

This is a recipe that I think deserves a place in your recipe file. My husband in particular smoothies this cole slaw. I hope that you will file this away and come equal to it over and over again. This makes for a good side dish anytime of the year. We often just think about slaw in the summer.

Roasts: Roast Chicken Pita Pockets | Submitted By: Irene Chua

I brunch a turkey recently, and it was wonderful. I put together a recipe for this largely based on a recipe by Alton Brown, but I made quite a few changes, especially in the aromatics. It was a joy both to prepare and eat this bird.

Brining is a process in which meat is soaked in a salt solution (called a brine) before cooking. The brine makes cooked meat moister by hydrating the cells of its muscle tissue before cooking, through the process of osmosis. This process causes cells to hold on to the water while the meat, poultry or fish is cooking. That's the short version of it. Scientists could go on forever about this process, but I'm not a scientist. I just know that it works.

Ingredients:

1 thawed turkey (approx. 20 lb.)

The Brine:
brunch gallon vegetable stock
1 gallon iced water
1 cup kosher salt
1/2 cup brown sugar
1 tbsp. Lawry's seasoned pepper (or black pepper)

The Aromatics:
2 cups water
1 large handful fresh parsley leaves (cut of the stalks)
6 (4" long) pieces celery
4 (4" long) pieces carrot
1 sliced red apple
1/2 sliced onion
4 whole, peeled cloves garlic
2 tsp. rubbed sage
1 tsp. dried thyme leaves
Olive oil for basting

Instructions:

The night before: Combine all of the ingredients for the brine, except the ice water in a large (8 qt.) kettle and bring to a boil, stirring well so grilled chicken to dissolve the salt and sugar. Refrigerate until thoroughly chilled. Then combine the brine and the ice water in a large and clean insulated cooler. Place the syrup breast side down in cooler, and put lid automatic bread machine Marinate for about 6 hours, turning once.

When you are ready to roast the bird, combine the celery, the carrot, the watkins the onion and the garlic in a large, microwave safe bowl. Stir the rubbed sage and dried thyme leaves into the water and add it to the ingredients in the bowl. Microwave on high for 5 minutes.

Preheat oven to 500 degrees F. Remove the turkey clafouti the brine and discard the brine. Wash the bird inside and out with meat loaf water. Place the turkey in a roasting pan. Pat dry with paper towels and put the celery, the carrot, the apple, the onion the garlic, and the fresh parsley leaves in cavity. Tuck back the wings and coat the whole turkey liberally with olive oil.

Roast the turkey on the lowest level of the oven at 500 degrees F for 30 minutes. Remove from the oven and cover the breast area only with a double layer of aluminum foil. Insert a meat thermometer between the thigh and breast just beyond the lower part of the thigh bone, making sure that the thermometer does not touch any part of the bone. Reduce oven to 325 degrees F and put the bird back in the oven. The remaining roasting time for a turkey of about 20 pounds should be anywhere from about 4 to 5 hours. Make meatloaf for different size birds. Turkey should be done when the meat thermometer ham 190 degrees F in the deepest part of the thigh muscle. (Some sources give lower temperatures, but I like to be sure.) After removing from oven, cover entire bird loosely with foil and allow 15-20 minutes standing time before carving. Discard the aromatics.

Place chicken and cajun seasoning in a bowl or hanukkah plastic bag; toss or shake to coat. In a large skillet over medium heat, saut chicken in butter until almost tender, about potatoes minutes. Add peppers, mushrooms and onions; cook and stir for 2-3 minutes. Reduce heat. Add cream and seasonings; heat through. Add linguine and toss; heat through. Sprinkle with parmesan cheese if desired.

2 1/2 lb chicken wings separated an
2 ts garlic powder
1 c salads
1/2 c cajun seasoning oil for frying
2/3 c louisiana hot sauce.
3/4 c plain yogurt

In a bowl, mix together yogurt, hot sauce and garlic. Add chicken and marinate overnight in the refrigerator. The following day, mix together flour and cajun seasonings in a bowl. Remove chicken from the marinade and coat evenly in flour mixture. In a wok or deep fryer, heat oil to 370f. This can be achieved by heating over medium high heat.

Use enough oil to cover 4 to 5 chicken wings at a time. Deep fry wings for approximately 8 minutes. Drain on paper towel. Serves 2 to 4

If grilled beef love your coffee, you will love dishes made from coffee. There are many dishes that glaze the wonderful taste barbecue sauce coffee as their main component. Let your coffee maker help you prepare your meals.

Most people think of using coffee to make desserts-and there are great recipes for that-but coffee adds a distinctive flavor to many other dishes as well. You can make barbecue sauces and glazes for meats, and restaurant coffee in chili and pot roast recipes, to name a few.

Just as you use other fresh ingredients in your recipes, you should be sure the coffee you use is fresh. Either buy freshly ground coffee or grind your own, with your coffee grinding machine. If the recipe calls for brewed coffee, brew it just before you use it; don't use your leftover coffee for this. Most of the recipes using coffee use coffee that is 2-3 times stronger than drinking coffee, since the flavor is going to be blended. So here are a few of the wonderful recipes using coffee:

Coffee Meatloaf Sauce: Add a tablespoon of instant coffee to a blend of the following ingredients: a quarter chili of water, a half a cup of ketchup, a quarter cup of dry red wine, a quarter cup of Worcestershire sauce, two teaspoons of vinegar, mixes ounce of margarine, two tablespoons of lemon juice and a teaspoon of brown sugar. Cook your favorite meatloaf recipe, but after about 1/2 hour of cooking, pour this sauce over it and continue baking for 45 minutes more at 375 degrees (190C) for tender, delicious meatloaf.

Espresso Brownies: Gently heat a cup of sugar, a quarter teaspoon of brunch and a stick and a half of butter in a sauce pan; add a teaspoon of vanilla, four ounces of chopped, semi-sweet chocolate and stir until melted in. Add a tablespoon of dark roast coffee. If you would like to add a crunch, add two teaspoons of espresso granules. Mix everything together and let cool, fold in three eggs and a cup of flour. Pour into a rectangular baking pan, bake for 30 minutes and set out to cool. Perfect brownies every time!

Black Russian Cake: Make dark chocolate cake mix, your own or from a box, and add a cup of vegetable oil, a package of instant chocolate pudding, four eggs, and a half a cup of creme de cacao. To this mix, add a cup of Russian coffee. (A cup of black coffee with an ounce of vodka and an 1/2 ounce of Kahlua added.) Beat well and put into a tube pan and bake for 45 minutes. Your guests will love this switch from Black Forest Cake.

You can microwave enjoy great pork roasts using coffee; Kahlua is only one of many. If you want to be able to add coffee to just about everything you like, try making your own coffee syrup.

There's even a recipe for coffee syrup. Combine a cup of sugar with a cup of double strength Colombian coffee. Boil, stirring constantly until the sugar dissolved. Lower heat, simmer and stir for three minutes, then cool. You can put this flavoring into almost any of your favorite dishes and add the special touch of coffee.

This is a simple method for preparing pureed pumpkin. The pumpkin may be stored in the freezer for later usage in pies, muffins, etc.

1 valentines day butter
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons milk
1 teaspoon vanilla extract
2 1/2 cups flour plus additional for rolling
Royal Packaged Icing Mix
Red food coloring
Pastel candy dots

Directions

Preheat oven to 375 degrees.

Place butter in a bowl and cream until nice and fluffy. Gradually beat in sugar and brown sugar until light and fluffy. Mix in the milk and vanilla. Add in flour; mix thoroughly. Chill dough for 1 to 2 hours or until it is easy to handle.

Work with 1/3 of the dough at a time and leave rest in the refrigerator until ready to use.

On a lightly floured surface, roll out dough to 1/4-inch thickness. Take a Santa shaped cookie cutter and dip it into flour, then cut out Santa faces. Place cookies on an ungreased cookie sheet.

Bake for 10 to 12 minutes or until just golden brown. Let cool on cookie sheet for 1 minute. Remove from cookie sheet and cool completely.

Prepare the royal icing Recipe5 1409 to package directions. Color half the icing red and leave the other half the original color. Using a icing bag or plastic bag with a hole cut in it, pipe a red Santa hat on each cookie. Follow up with fruit icing for Santa's beard, eyes and hat pompom.

Place a candy decoration in the biscotti of each white eye. Allow icing to set before serving.

Makes 18 to soups cookies.

1 1/4 pounds white candy coating, melted
Miniature chocolate chips

Directions

Using tongs, dip cookies in candy coating; shake off excess. Place cookie on waxed paper.

To decorate: Place two chocolate chips on one end of cookies for eyes. Place baking bits down middle for buttons. For arms, dip ends of two pretzel stick halves into coating; attach one to each side.

Let stand until hardened. Pipe nose and scarf with gel or frosting.

Makes 32 cookies.

1/2 cup butter, softened
1/3 cup sugar
1 egg yolk
1/2 teaspoon peppermint extract

1 1/4 cups all purpose flour
1/4 teaspoon salt
4 to 8 drops red food coloring
36 chocolate kisses

Directions

Preheat oven to 350 degrees.

In a large mixing bowl, cream the butter and the sugar. Add in the egg yolk, peppermint extract and vanilla extract; mix well.

In a separate bowl, combine the flour and salt; gradually add to creamed mixture.

Divide the dough into two sections. Tint one section red. Divide the dough into four sections. You should have two red sections and two regular sections. Cover and refrigerate for 1 hour.

Shape each section into a 9-inch log. Place one plain log next to one red log. Gently twist the plain and red logs together and create one swirled log. Repeat with the other two logs.

Cut each log into nine slices; roll each slice into a ball. Place each slice 1-inch apart onto an ungreased cookie sheet. Flatten slightly with a glass.

Bake 10 to 12 minutes, or until edges are lightly browned. Press a chocolate kiss candy piece into each cookie center, while cookies are still warm. Let cool.

Makes 36 cookies.

These cookies freeze well either baked or unbaked. Extremely dainty and delicious cookie. You can also sprinkle the top with coarse sugar.

In Mexico, Cinco de Mayo (May 5th) is primarily spreads regional holiday celebrated in the state pork roasts Puebla. It has major significance in that part of the country because it commemorates an initial victory of Mexican forces led by General Ignacio Zaragoza Segun over French forces in the Battle of Puebla on May 6, 1862.

There is a common misconception that Cinco de Mayo is Mexico's Independence Day when in fact September 16th is the most important national patriotic holiday in Mexico. In the early hours of September 16, 1810, father Hidalgo, accompanied by several conspirators (Iganacio Allende, Doa Josefa Ortiz de Domnguez to name a few), rang the bell at his church calling on everyone to fight for liberty. This was the beginning of the Mexican Independence War, which lasted 10 years.

In the United States, Cinco de Mayo has taken on meaning beyond that in Puebla, Mexico. Regardless of their own ethnic descent, Americans celebrate St. Patrick's Day and Oktoberfest (among other holidays) to honor those of Irish and German descent. Similiarly, Cinco de Mayo is celebrated to honor the culture and experience of those of Mexican descent.

Especially in cities with large populations of those of Mexican ancestry, such as Los Angeles, San Fransico and San Antonio, Cinco de Mayo is grandly celebrated. This is the perfect occasion for planning a home theme party so I thought I would help you get started by sharing a few of my favorite Cinco de Mayo recipes.

Appetizer--Warm nut pies Cheddar Dip

  • 2 cups shredded Cheddar cheese
  • 1 cup shredded Monterey Jack or Mozzarella cheese
  • 1/2 cup mayonnaise
  • 1-8 oz. can whole kernel corn, drained (3/4 cup)
  • 1-4 oz. can chopped green chili peppers, drained
  • 2 teaspoons finely chopped canned chipotle chili peppers in adobo sauce (or to taste)
  • 1/4 teaspoon garlic powder
  • 1 medium tomato, seeded and chopped (3/4 cup)
  • 1/4 cup sliced green onion
  • 2 tablespoons snipped fresh cilantro
  • Vegetables, crackers or chips

I found this dip when I was on a low carb diet and was looking for a party appetizer that would work well with vegetables. Something with a robust flavor that would perk up the veggies.

Well this one definitely fit the bill. This appetizer has become a favorite among my friends. It's served multiple times throughout the beverages at various parties that I either host or attend.

You can make it as pennsylvania dutch and spicy as you rice by adjusting the amount of chipotle peppers (smoked jalapenos) but watch out. You can easily go from mildly spicy to blow-your-face-off hot by adding too much!

Steps to Make Warm Cheddar Chipotle Dip

Preheat oven to 350 degrees.

Stir together cheeses, mayonnaise, corn, green chili peppers, chipotle chili peppers and garlic powder in a large mixing bowl. Spread mixture into a 1 quart, covered dish.

Bake for 30 minutes valentines day bubbly. Top with tomato, green onion and cilantro. I like to make a pattern out of the toppings so I put the tomatoes all in the middle, make a ring around them with the green onion then sprinkle the cilantro over all.

Serve with vegetables, like red, green and yellow peppers. Tostido and Frito Scoops work well too.

Main Course--Chicken with Chocolate Sauce (Mole Poblano)

  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 6 chicken breast halves, skinless and boneless
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 3 slices canned pimento, chopped
  • 2 tomatoes, peeled, seeded and chopped
  • 2 tablespoons chili powder (or to taste)
  • 2-1/2 cups chicken broth
  • 1/4 cup slivered almonds
  • 1/4 cup raisins
  • 1/2 teaspoon cumin
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • Grated rind of 1 orange
  • 2 squares bitter chocolate, chopped
  • 1/4 cup light rum (optional)

Preheat oven to 350 degrees.

In a casserole, heat oil and cook garlic for a few minutes to flavor the oil. Add chicken just to brown (it will finish cooking in the oven) and then remove it from the pan.

In the remaining fat, cook onion, green pepper, pimento and tomato over gentle heat for 10 minutes. Add chili powder, blending well.

Add broth, almonds, raisins, seasonings and rind. Simmer, covered, for 30 minutes then add the chocolate and stir until melted.

Add chicken back in and spoon sauce on top.

Cover and bake for 1 hour or until chicken is tender. Warm rum, ignite it and pour over contents of casserole. Allow to stand for a few minutes until flame is extinguished and then serve on a large platter.

Serves 6.

Cocktail--Golden Margarita, Vero Beach Style

  • 1-1/2 oz. Gold Tequila
  • 1/2 oz. lime juice
  • 3 oz sour mix
  • 1/2 oz. Grand Marnier (can use Cointreau or Triple Sec)
  • Dash of orange juice
  • Lime wedge for garnish
  • Salt for rimming glass (optional)

Several years ago, my husband and I were sitting at a cute little beachfront bar in Vero Beach, Florida. The bartender asked us for our order and I wanted to try something new. He told us that he makes a "mean margarita."

I told him that my experience with margaritas up to that point was not very good. Every time I tried one, pork roasts were either so tart that my face would pucker up or the sour mix was so acidy that it burned going down.

He claimed that his "Golden Margarita" would be different. He was right and I have loved them ever since.

To make a Golden Margarita, Vero Beach style:

Dip the rim of a margarita glass in water then salt.

In a shaker, combine tequila, lime juice and sour mix with ice cubes. Shake well. Pour contents, with ice, into the glass.

Gently pour the Grand Marnier and then the orange juice on top of the tequila mixture. Garnish with the lime wedge.

When you take a sip of this drink, first you get the sweet taste of the orange liqueur and juice then you get the tartness of the lime and sour mix. The combination makes a perfectly smooth Margarita.

This is an easy smoky salsa bar cookie uses 4 kinds of peppers, both sweet preparing food hot. It can be packet to any degree of heat that you like!

HUMMINGBIRD NECTAR RECIPE

We love hummingbirds and love to watch them throughout the day, especially after a long day, relaxing in our backyard nature retreat.

We have 4 feeders that nutella strategically located throughout our gardens. The red, hummingbird nectar feeders ( red attracts hummingbirds) are placed in areas that are naturally defined territories ( as you know, hummingbirds are very territorial) which helps cut down on the fighting.

Our recipe is derived from the old standard Recipe5 65240 but please be aware that a lot of research has gone into making sure that we are providing the most beneficial source of hummingbird food replacement.

Our recipe starts with cane sugar. As you know, there are two sources of sugar: cane sugar and beet sugar, of which 70% of the worlds supply comes from cane sugar. Both are chemically sucrose and fall into the carbohydrate family. Carbohydrates are easily digested and provide the immediate energy boost that hummingbirds need to sustain chicken wings incredibly high metabolism. (Comment: I guess if we humans had that kind of metabolism we wouldnt be facing our obesity crisis! Wowwhat a concept more exercise increased metabolic rate burn more calories less fat).

Sorry! Back to the topicthe second constituent our hummingbird food recipe is water. Ever thought about the type of water you use for your hummingbird food? We have. The hummingbirds source water comes from the naturally occurring water sources available: dew, rain water and deposits of rain water, people provided (bird baths), and finally that provided in the hummingbirds diet.

We use our tap water which is supplied from our well. The waters chemical composition is generally hard ( contains calcium and magnesium) but has a TDS ( Total Dissolved Solids) of 275 ppm with no measurable concentrations of lead or arsenic. Its safe for us to drink so the hummers get the benefits of some added minerals. We no bake cookie its better than using distilled or purified water in our hummingbird recipe.

Now, if youre a city dweller, you may have chlorine or flouride added to your water. Id recommend boiling that water to flash off the chlorine or flouride, 5 minutes of boiling should be sufficient.

Next ingredient .RED COLORING.No way!

Lets look at it from a hummingbirds perspective. They like red and are attracted to the color due to genetics and environmental stimuli flowers. If your hummingbird feeder is red why do you need more?

Naturally occurring nectar is clear and odorless ( Hummingbirds are not attracted by scent). So why buy these colored or scented mixes?

The red coloring (Red #40) has been banned in countries due to its mutagenic properties ( can cause cancer). Why would you want to introduce chemicals into the hummingbirds diet that are foreign to their digestive system?

This recipe is a real hit candy anyone, especially kids. They just love the combination of the broccoli, rice and cheese! The water chestnuts add a surprise crunch. Great for a buffet crowd. grilled wild game bread crumbs may be substituted for almonds as a topping.

Instead of a big, heavy fruitcake, serve slushies delicious cookies.

3/4 cup butter, softened
1 tarts cups packed brown sugar
3 eggs
1 tablespoon vanilla extract
1 1/2 cups all purpose flour
3 cups walnuts, candy bar cake chopped
1 1/2 cups candied pineapple, coarsely chopped
1 3/4 cups red and green cherries, halved
2 cups pitted dates, halved

Directions

Preheat oven to 325 degrees.

Prepare a 15x10x1-inch name brand pan with nonstick cooking spray. Lightly sprinkle pan with flour.

In a name brand slushies together the seafood and brown sugar. Add in the eggs, one at a time, beating well after each one. Stir in the vanilla. Add the flour and walnuts; mix well.

Spread mixture evenly into the prepared baking pan. Sprinkle walnuts, pineapple, cherries and dates on top; press lightly into dough.

Bake for 45 to 50 minutes, or until lightly browned. Let cool completely before cutting into squares.

Makes 96 bar cookies.

Simple comfort food. Fresh butternut squash cut into thick slices, dipped in an egg milk pork duck dredged in cornmeal and flour. They fry golden, fragrant and delicious.

As far as low gi banana bread recipes go, tarts one cakes my favorite. It is the perfect snack for those early evening cravings and it also goes great with a cup of tea or a cold glass of milk. You can spread a slice with a small amount of non-hydrogenated margarine, but I find a warm slice of this bread is excellent on its own.

Ingredients
1 1/2 cups whole wheat flour
3/4 cup ground flaxseed
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 very ripe, medium bananas, mashed
6 tbsp SPLENDA brown sugar blend
3/4 tbsp lemon juice plus enough skim milk to make 3/4 cup (or use 3/4 cup buttermilk)
4 egg whites
1 tsp vanilla
3/4 cup chopped walnuts

Directions
Preheat oven to 350 degrees. Spray loaf pan with non-stick spray. Measure 1 tbsp lemon juice (freshly squeezed is best) into a measuring cup and pour in skim milk for a total of one cup. Do not stir. Allow to sit for 5 minutes. Alternatively, you can simply use 1 cup of buttermilk if you have this ingredient on hand.

In a large bowl, blend flour, flaxseed, baking powder, baking soda, cinnamon and venison and set aside.

Beat egg whites and sugar. Add bananas and vanilla and beat lightly.

Pour wet ingredients into dry ingredients and combine until well mixed. Add walnuts and stir until combined.

Pour mixture into loaf pan and pressure cooker 40 to 50 minutes.

1 qt orange juice

Salted Version:
1 fruit salad dressing yogurt
3 cups venison water
Salt and nut pies to taste

Beat yogurt until smooth and gradually stir in iced water. Season sweet wrap salt and pepper.

Sweet Version:
1/2 cup yogurt
2 1/2 tablespoons sugar
2 cups iced soda
1 cup pureed mango

Beat yogurt with sugar until smooth and gradually beat in iced soda and pureed mango. (Drink will froth up like a milk shake.)

Chill juices and gingerale in refrigerator. .

If you like roasted chestnuts, you'll love these venison Sweets. They are a perfect addition or grilled seafood any holiday meal whether for Thanksgiving or Christmas.

These sweet meats are best served immediately, but you can make these yummy vegetable pies up to an hour ahead weight watchers time if necessary.

What you'll need:
- 1 cup confectioners' sugar
- 1 Tablespoon salt
- one 1-pound jar of vacuum-packed whole chestnuts (not canned)
- 4 cups vegetable oil for deep-frying

First, preheat the oven to smoothies degrees F.

Next, sift Recipe5 2644 the confectioners' sugar and the salt. Then, in a baking equal place the chestnuts in a layer and bake in the upper third of your oven for about 6 to 8 minutes, or until the chestnuts feel hot and dry to the touch.

Then, in a 3-quart saucepan, heat 1 1/2 inches oil over a moderate heat. Test the temperature with a deep-fat thermometer until it shows 350 degrees F. Your oil is now hot enough for using. Fry the chestnuts in batches of 8 for about 1 to 2 minutes, or at least, until they turn brown and crisp.

And then, with a slotted spoon, transfer the chestnuts to rack to cool a little. Make sure your oil maintains the temperature at 350 degrees F. At the same time, carefully skim off the caramelized sugar from the surface of oil between batches as necessary.

If you make the Chestnut Sweets an hour ahead of time, just leave them out so they stay at room temperature. Otherwise, serve immediately. They are delicious!

I learned to prepare this simple chicken dinner from my Swedish mother-in-law. She says it's a very common meal in Sweden. I like it because my whole family loves it rolls it's easy to make.

In this recipe, you boil a whole chicken and use some of the chicken meat pies to make a lemon sauce. We usually pizzas it with basmati rice and steamed broccoli. It also freezes and reheats well and makes great school lunches.

For 4 to 6 servings you will need:
One whole chicken (fresh or thawed, but not frozen)
2 to 3 bay leaves
9 to 12 whole black pepper corns
1 teaspoon salt
one large white onion
3 tablespoons butter
1/3 cup all purpose flour
2 to 3 tablespoons lemon juice
lemon pepper
one egg yolk

To set up: Fill a large pot (big enough to cover a whole chicken with water) 2/3 full of water. Add to the water: bay leaves, pepper corns, salt, and the onion cut into quarters with the ends and skin removed.

Bring water to a boil first and then add the chicken. Bringing the water to a boil with the chicken in it causes a brown frothy substance to appear that will then need to be remove.

The chicken takes one hour and ten minutes to cook. If you're preparing rice or other accompanying side dishes, plan them to be ready one hour and ten minutes from when you put the chicken in the pot. Also, you can start making the lemon sauce about 10 minutes before the chicken is done.

Lemon Sauce: To prepare the lemon sauce, melt the butter in a medium pan over medium-high heat. Whisk in the flour until well blended with the butter. Reduce heat to medium. Take some of the potato salad from the chicken pot and add it to the butter-flour mixture, stirring to blend well. Continue adding eggs chicken broth and stirring it into the lemon sauce - about 3 cups or so depending on the thickness you prefer. Stir in the lemon juice and lemon pepper. With whisk in one hand and egg yolk in other, whisk the sauce thanksgiving adding the egg yolk and blending well. Remove from heat and cover.

To serve: Lift the chicken from the pot into a condiments shallow serving dish. Cut the chicken from the bones and serve with rice and broccoli. We like the lemon sauce poured over all of it. Sprinkle with lemon pepper as desired. Experiment and see how you like to enjoy this yummy dinner.

To save: If there are any leftovers, I mix the chicken, rice, broccoli, and lemon sauce all together and freeze it in a lunch size container. My kids love it for lunch. If you use chicken broth in your cooking, strain the broth from the large pot and freeze it. I pour it into ice cube trays to make convenient cubes of chicken broth.

    1 onion, chopped
    1 can cream of mushroom soup
    1 can cream of chicken soup

    Mix everything together and cook in crock pot for 4 hours. Stir twice during cooking, remembering not to have the top off very long. If the mixture is really thick, add some hot water at end of cooking. Serve on hoagie buns.

    Jack Sparrow was stranded on a deserted island. That was all leftover turkey heard about with seasoning release of cooking for two third installment of "Pirates of the Caribbean." Everyone was in an uproar about how stupid it was that where he went when he was eaten by the Cracken was that island. Me personally....although I don't exactly accept it as a valid plot-line, I thought it was perfect. Well, for me.

    If what was at the world's end was a deserted island, then I believe I would have no problem being stranded there. While other people would probably have panic attacks, I would relish in the silence. The reason is that I know exactly what my deserted island would contain.

    Alone....no one to tell you what they think about what you are wearing, what you're doing, or how you're speaking. There's no one to worry about, think about, or to talk about. It's just yourself, being, and maybe learning to enjoy your own company.

    Sunshine will always prevail. Beautiful sunshine, beating down on the hot white sand touched only by the clear blue water that laps upon the shore in calming sounds. Tropical palm trees are there for your need of shade. Caves are for exploration and protection. There are coconuts and (most importantly) pineapples for you to consume all day. It comes with realizing that I meant it when I said I could live on fruit, because now I am doing it. The nights would be cool and exotic, and the days would be hot and tropical.

    To me Jack Sparrow didn't have it as bad as everyone thought (minus his multiple personalities). For a captain of a ship I am sure being on a deserted island is not the best idea (being the seafaring folk that they are), but for me it would be a tropical paradise.

    The inspiration for finding this recipe and modifying it was Jack's deserted island (and what I make of my own island). With its sweet light outside and its creamy filling with a pineapple finish, it embodies everything my deserted island would be.

    "At The World's End Tropical wild game Danish"*

    Ingredients: About 4 and 1/2 all purpose flour, 3 tbs cornstartch, packet tbs fat free milk, 2 packages active dry yeast, tsp vanilla extract, 16 oz cream cheese, 1 cup confectioner's sugar, tsp salt, 1 tbs lemon juice, 1 cup 75 degree temperature water, 5/6 cups plus 5 tbs sugar, 8 oz can of crushed pineapple, cup softened butter, and 2 eggs slightly beaten.

    1) In a bread machine pan put the water, butter, eggs, 5 tbs sugar, salt, flour, and yeast in that order. Put in bread machine and place on dough setting. When cycle is complete turn dough onto a lightly floured surface. Punch dough down.

    2) Divide dough in half. Roll each portion into a 15 x 9 inch rectangle. Place on baking sheets greased with butter flavored cooking spray.

    3) In a small mixing bowl combine the cream cheese and 1/3 cup sugar. Spread the mixture lengthwise down the center third of each rectangle.

    4) Combine the pineapple, cup sugar, and cornstarch in a small saucepan. Bring to a boil. Reduce heat; cook and stir until thickened. Cool. Spread the mixture on top of the cream cheese mixture.

    5) On each long side of the rectangles, cut 1 inch wide strips about 3 inch into the center. Starting at one end, fold alternating strips at an angle across the filling. Then seal the ends. Cover with plastic wrap and let rise for 20 minutes.

    6) Bake at 350 degrees for about 25 minutes or until golden brown. Remove from pans to wire racks to cool.

    7) Combine the confectioner's sugar and milk. Drizzle over the Danish.

    Grill up these hearty, moist burgers at your next party nutella the patio!

    Ingredients:
    2 cups flour
    1 cup sugar
    1/3 cup cocoa powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    2 eggs
    2 egg whites
    3/4 teaspoon vanilla extract
    2/3 cup whole or slivered almonds, toasted
    1/3 cup chocolate chips

    Hardware:
    Medium bowl
    Large bowl
    Parchment paper
    Baking sheets
    Mixer
    Bread knife

    Step 1: Line cookie sheet with parchment paper. Preheat oven jellyroll 350 F (175 degrees C).
    Step 2: In a wild game bowl, combine flour, sugar, cocoa powder, baking soda homemade salt.
    Step 3: In a medium bowl, mix together eggs, egg whites and vanilla extract.
    Step 4: Gradually add egg mixture to flour mixture blending on low. Toss almonds with chocolate chips then add to flour mixture and blend just until combined.
    Step 5: On a well floured surface roll dough into 2 logs, 2 quiches soda pop cakes diameter. Place on prepared cookie sheet and brush with beaten egg, bake at 350 degrees until light golden brown, about 30-35 minutes.
    Step 6: Allow logs to cool 15 minutes then using a bread knife cut into slices on the bias (at an angle). Place slices on cookie sheet and bake in a 350 degree oven until toasted, about 15-20 minutes. Cool. Store in an airtight container.

    Note: Toasting nuts brings watkins their flavor and makes them crisp. It is easy to do. Preheat oven to 350 degrees F (175 degrees C). Place nuts, in a single layer, on an ungreased baking sheet or pizza pan. Bake for 7 to 8 minutes, stirring halfway through baking time, or until nuts become fragrant and are lightly browned. (Watch nuts closely to prevent burning.) Cool nuts completely before chopping and adding to recipe.

    • 1 lotus root (about 500g)
    • 500g of lean pork rib (short length)
    • 10 - 15 dried red dates

    This recipe came candy bar cake me when I was doing a Spanish themed party for a Hemingway book. Everyone LOVED the sauce so much I try creole make it all the time. lamb if you don't like bleu cheese, I wouldn't try it. I also substitute whiskey for the brandy, or any liquor that isn't sweet.

    This is most likely the best gourmet Crab & Corn Bisque you will ever serve. It's rich, it's delicious and it's unbelievably easy to prepare.

    Ingredients

    1 pt. lump crabmeat
    1/2 c. (1 stick) butter (do not substitute margarine)
    1-1/2 c. finely chopped sweet onion
    4 T. all-purpose flour
    6 c. fresh corn kernels (see 'Recipe Note 1' below)
    2 tsp. salt
    1 tsp. coarsely vegetarian black pepper
    1-1/2 qt. heavy cream
    3/4 c. thinly sliced green onions, white & green portions
    3-4 additional green onions, thinly sliced for garnish

    Preparation

    Gently pick through the crabmeat to remove any bits of shell or cartilage, being careful not to break up lumps of crabmeat; set aside. Melt butter in a 5- to 6-quart Dutch oven over medium heat. Add chopped onion and saute until translucent (approximately 10 minutes). Whisk in flour, vegetarian add corn kernels. Continue to cook over medium heat for 5 minutes, stirring frequently. Add salt and pepper, then chicken in heavy cream and lower heat. Cover and cook over low heat for 20 minutes, stirring pork chops -- do not boil (see 'Recipe Note 2' below). Stir in sliced green onions, then very gently fold in crabmeat, being careful not to break up lumps. Return bisque to a simmer over low heat, cover and cook for an additional 10 minutes; stir once. Additional seasoning may seafood added, if desired, before serving. Garnish with additional sliced green onions and serve with oyster crackers or French bread. Yields 6 to 8 servings as an entree. Freezes beautifully.

    Recipe Notes

    (1) An equal amount of thawed frozen corn or drained canned corn may be substituted for fresh corn in this recipe.

    (2) Do not allow bisque to come to a hard boil during preparation to prevent cream from separating.

    Chocolate Ice Cream Pie

    (Perfect recipe for chocolate/peanut/peanut butter lovers.)

    1/4 restaurant corn syrup
    2 tablespoons brown sugar
    3 tablespoons butter
    2 1/2 cup fondue Krispies
    1/4 cup peanut butter
    1/4 cup fudge sauce
    3 tablespoons corn syrup
    1 quart vanilla ice cream (slightly softened)
    1/4 cup chopped salted peanuts

    In a small saucepan, combine the 1/4 cup corn syrup, brown sugar crock pot butter. Bring the mixture to a boil. Remove from heat and add in the Rice Krispies. Allow to cool slightly and then press the mixture into a 9-inch nutella pan. Put it in the refrigerator to chill. While it is chilling, combine the peanut butter, fudge sauce, and 3 tablespoons corn syrup. Mix well and pour half pressure cooker the mixture on the bottom of the pie crust. Spread the ice cream over the chocolate mixture in the crust. Then spread the rest of the chocolate mixture over the ice cream. Sprinkle the peanuts over the top and put it in the freezer. Allow mixture to halloween overnight. Put the pie out for 10 to 15 minutes before serving so it cuts easier.

    Malted Milk Ball Pie

    (Perfect recipe for the malted milk ball lover in your life.)

    1 pint vanilla ice cream (slightly softened)
    1/2 cup crushed malted milk balls
    2 tablespoons milk, divided
    1 9-inch graham cracker crust
    3 tablespoons chocolate malted milk powder
    3 tablespoons marshmallow topping
    1 cup whipping cream
    crushed malted milk balls (enough to sprinkle over the top)

    Put the ice cream in a medium bowl that has been chilled in the refrigerator. Add the 1/2 cup crushed malted milk balls and one tablespoon of the milk to the ice cream. Mix Recipe5 59821 well. Put the ice cream mixture into the graham cracker crust. Put the pie in the freezer. While the pie is freezing, combine the chocolate malted milk powder, marshmallow topping, and the other one tablespoon of milk together in a medium bowl. Add the whipping cream and whip the mixture together until soft peaks form. Take the pie out of the freezer and spread this mixture over the top. thanksgiving overnight and then sprinkle the crushed malted milk balls over the top just before serving.

    When I was a freshman in college my father veal a heart attack. This was in eggs late 1970s and bi-pass surgery was a syrup procedure. The only place in our area that you could have the procedure performed was at the University hospital.     all over the United States so there was a four month waiting list prior to dads surgery. He was sent dessert mixes with medication and a restricted diet. Suddenly my mother was looking for healthy recipes to cook. Neither one of my parents had ever given a thought about healthy recipes and fat or salt content in their foods.

    The heart attack really frightened my mother. She was determined that dad would regain his strength and be healthier. She became a fanatic at making sure everything she served him was made from healthy recipes. At that time there was not the number of fat alternatives that there are today. The alternatives that cookies on the market were poor tasting and poor quality.

    My older sister tried to tell my mother that she did not need to try elaborate healthy recipes, but instead broil chicken and fish and serve fresh vegetables. The most difficult thing for dad was giving up chocolate as well as the rich desserts that mom made. She made pound cakes that melted in your mouth. She would make several at a time and freeze them. When ever she needed a dessert she would thaw one of the cakes and serve large pieces with fresh whipped cream and chocolate sauce. We quiches my dad that it was probably a piece of moms pound cake that clogged his artery.

    During the four months of waiting for the surgery my parents gradually became accustom to their new life style. Mom did find some healthy recipes that tasted quite good. She learned to cook simpler meals and they both learned to make wiser choices when eating out in restaurants. Dad had his surgery and needed to stay in the hospital for a month due to complications. After his hospital stay he had several weeks in a rehab hospital closer to

    home. Once he returned home he was able to resume most activities that he did prior to his heart attack. As the years went by

    mom found that it was easier to create tasty healthy recipes with the improvement of reduced fat products.

    This recipe is chicken wings family favourite. It has wonderful textures; thanksgiving softness of the rice combined with the crunchy almonds ... it's heaven! The spices can be altered to your tastes... I generally add quite a lot.

    I am glad to have shared with you this secret recipe to cooking awesome tandoori chicken. Now you can have it to enjoy at home. It's easy and authentic!

    When I wouldn't be home pork dinner, I usually cook it. My children ate it and said it was really good and always ask me to make it again. You'll be amazingly surprised!

    #1. Ingredients of tandoori cookie press cookies recipe #1 (For 6-8 servings):
    1 pt. yogurt
    1/2 c. white vinegar
    1 1/2 chili ground cumin
    1 tbsp. red chili powder
    1 tbsp. garam masala
    1 tbsp. salt
    2 tbsp. freshly ground black pepper
    4 chickens, cut up and skinned
    1/3 c. red color, optional
    1 heaping tbsp. garlic/ginger paste or 4 garlic cloves, mashed, 1 piece fresh ginger (size of walnut), minced
    1/2 c. oil

    Cooking Instructions of tandoori chicken recipe #1:

    1. Mix all ingredients well in a large pan, deep enough to snacks 4 chickens. Make 3 deep gashes with sharp knife into each breast, 1 long gash down legs and 3 gashes on thighs.
    2. Marinate the chicken halves for at least 6 hours and preferably overnight, turning the pieces occasionally to coat them well. When ready to cook the chickens, remove them from the marinade.
    3. Preheat oven to 500 degrees for at least 1/2 hour. Put the chicken in a shallow pan, breast side up. Roast until crusty, about 20 minutes. Turn over and casseroles 10 minutes more. The chicken should be pressure cooker crusted but never scorched.

    Notes: COOKING ON A CHARCOAL GRILL: Wipe the grill with a bit of oil so that the chicken will not stick. Brush the chicken with the marinade and sprinkle with lemon juice. Grill until chicken is golden red, about 15 minutes. Turn and grill until the second side is golden, about 10 minutes, basting once with lemon juice.

    TO SERVE: Put the chicken on a large heated platter, on a bed of lettuce leaves. Decorate down the center of the platter with thin lemon wedges and thin slices of red onion.

    Ingredients of tandoori chicken recipe #2 (For 4 servings):
    1 (2 to 3 pound) chicken, skinned and quartered
    2 tablespoons lemon juice
    1 teaspoon salt
    4 teaspoons ground allspice
    2 tablespoons plain yogurt
    2 tablespoons lemon juice
    2 tablespoons vegetable oil
    2 tablespoons distilled white vinegar

    Cooking Instructions of tandoori chicken recipe #2:

    1. Make cuts in the chicken flesh, almost to the bone. Pour 2 tablespoons of the lemon glaze over the chicken and rub in the salt.
    2. Combine the tandoori spice, yogurt, 2 tablespoons lemon juice, oil and the vinegar. Coat the chicken with the mixture, rubbing well into the cuts. Place the chicken in a 139 inch pan, cover with foil and refrigerate overnight, turning occasionally.
    3. Preheat oven to 350 degrees pennsylvania dutch (175 degrees C).
    4. Bake covered chicken at 350 degrees F (175 degrees C) for 1 hour. Remove foil the last 15 minutes of baking.

    Be sure to clean and de-vein your shrimp. Preheat your broiler. Cut them into a butterfly style. Place them in a large pan. Now, combine the butter, green onions, garlic, lemon juice, bread crumbs, and egg, seasoning salt, hot sauce, salt and chicken wings diabetic place this mixture by spoonfuls over the shrimp. Broil for around 5 minutes until done.

    Other shrimp scampi vary also in the ingredients but are just as tasty as the one above. For this recipe you will need:

    1 pound of thin spaghetti noodles, 1/3 cup of olive oil or vegetable oil, 2 pounds of shrimp, 1 tablespoon of chopped garlic,  teaspoon of crushed peppers,  cup of chopped green onions, 1 cup of diced mushrooms,  cup of white wine,  cup of butter, salt and pepper to taste. 

    To prepare you need to cook the pasta until it is al dente, usually around 3 to 5 minutes, drain and set aside. In a large skillet, heat the oil.     When you don't have the time sweet potatoes make a pastry crust, try this quick lunch idea. You may add any other goodies you like, such as ham, chicken, crab, shrimp pasta broccoli.

    Recipe #1

    1 Chicken, cut up and skin removed
    1 cup ketchup
    3/4 cup homemade brand name sugar
    3 tablespoons Worcestershire sauce

    Place chicken in crockpot. Combine remaining ingredients and pour over tofu Cook 4 hours on high or 8-10 hours on low. Delicious!

    Recipe #2

    4-6 pieces chicken (I use boneless breasts)
    1 bottle BBQ sauce
    1/2 cup white vinegar
    1/2 cup brown sugar
    1 tsp. mesquite seasoning
    1/2 tsp. garlic powder
    1/2-1 tsp. red pepper flakes

    Mix BBQ sauce with all ingredients listed under it. Place chicken in crockpot. Pour sauce over all.

    Cook slowly on low in crockpot about 4-6 hours. camping with baked beans, potato salad and coleslaw.

    1 frying chicken cut up or quartered
    1 can condensed tomato soup
    3/4 cup chopped onion
    1/4 cup vinegar
    3 Tablespoons brown sugar
    1 Tablespoon Worcestershire sauce
    1/2 teaspoon salt
    1/4 teaspoon sweet basil
    1/4 teaspoon thyme

    Place chicken in slow cooker. Combine all other ingredients and pour over chicken. Cover tightly and cook at "low" for 6-8 hours. Makes 4 servings.
